Vacuum Packaging is packaging in a modified atmosphere by partially removing the air: When the package is closed, a modified atmosphere containing 10-20% CO2 is created spontaneously.
The vacuum can be created by three methods:
1. pulling air out of the package by means of suction nozzles
2. the injection of a powerful jet of steam into the pack
3. shrinking the shrinkable plastic film under heating
